Recipe tips and kitchen tricks

  1. Use room temperature ingredients: Allow ingredients like eggs, butter, and dairy products to come to room temperature before incorporating them into your recipes. This ensures better blending and a smoother texture.
  2. Measure ingredients accurately: Use measuring cups [paid link] and spoons to measure ingredients precisely. Baking, in particular, requires accurate measurements for consistent and successful results.
  3. Preheat the oven properly: Always preheat your oven before baking. This ensures even cooking and proper rising of your baked goods.
  4. Sift dry ingredients: Sifting dry ingredients like flour, baking powder, and cocoa powder helps remove lumps and aerates them for a lighter texture in your baked goods.
  5. Don’t overmix batter: When mixing ingredients, especially in baking, be careful not to overmix the batter. Overmixing can lead to a dense and tough final product. Mix until just combined for the best results.

Recipe Variations

  1. Pineapple Butter Rum Cake: Add a tropical twist to your butter rum cake by incorporating crushed pineapple into the batter. The pineapple adds a tangy sweetness that complements the buttery and rum flavors perfectly.
  2. Nutty Butter Rum Cake: For a delightful crunch and added richness, sprinkle chopped nuts such as pecans or walnuts over the cake batter before baking. The combination of the buttery rum cake and the nutty texture creates a delightful contrast.
  3. Rum-soaked Butter Rum Cake: Take the rum flavor to the next level by creating a rum syrup to drizzle over the cake once it’s out of the oven. Mix rum with sugar and heat it until the sugar dissolves, then generously pour the syrup over the warm cake. The rum-soaked cake becomes incredibly moist and infused with a bold rum flavor.

Serving Suggestions

  1. Whipped Cream and Fresh Berries: Serve slices of butter rum cake with a dollop of freshly whipped cream and a scattering of seasonal berries such as strawberries, raspberries, or blueberries. The creamy texture of the whipped cream and the vibrant burst of flavors from the berries complement the richness of the cake.
  2. Caramel Sauce and Vanilla Ice Cream: Drizzle warm caramel sauce over a slice of butter rum cake and serve it with a scoop of creamy vanilla ice cream. The combination of warm caramel, cold ice cream, and indulgent cake creates a delightful contrast of temperatures and flavors.
  3. Rum-infused Custard: Prepare a luscious rum-infused custard or crème anglaise to serve alongside the butter rum cake. Pour the custard over the cake or serve it in a small dish on the side. The creamy custard adds an extra layer of richness and enhances the rum flavors in the cake.
  4. Toasted Coconut Flakes: Sprinkle toasted coconut flakes over the top of the butter rum cake for a tropical touch. The toasty and slightly nutty flavor of the coconut complements the butter and rum flavors while adding a pleasant crunch.
  5. Warm Butterscotch Sauce: Warm up some butterscotch sauce and generously drizzle it over slices of butter rum cake. The smooth and buttery butterscotch sauce pairs wonderfully with the cake’s rich flavors, creating a truly indulgent dessert experience

Ingredients

  • 1 box of White or Yellow cake mix
  • 2 small (3.4 oz) boxes of instant butterscotch pudding
  • 3/4 cup butter , melted
  • 1 cup milk
  • 4 eggs
  • 6 oz Butterscotch Chips
  • 1 Tsp Rum extract
  • 1 Tbsp Butter flavoring

Royal Icing:

  • 1 cup powdered sugar
  • 2 tbsp water

Instructions

  • Preheat oven to 350 °F
  • Grease a 10-inch bundt pan [See Note 1] with non-stick cooking spray.
  • In a mixing bowl [paid link], combine cake mix, puddings, melted butter, milk, eggs, butterscotch chips, and extracts for about 3 minutes, being careful not to overwork the batter as overworking the batter causes a more dense cake.
  • Pour into prepared pan and bake 40-45 minutes or until a toothpick inserted comes out clean.
  • Let the cake rest on a cooling rack [paid link] in the pan for 10 minutes. Then, invert the cake onto a serving plate to finish cooling.
  • Once the cake is cool, drizzle with royal icing.

Notes

  1. For bundt pans with deep grooves such as the heritage bundt pan [paid link], I find that using vegetable shortening works best for helping the cake release from the pan. For a standard bundt pan [paid link], non-stick cooking spray or butter works fine.
