Crock Pot Braised Pork and Sauerkraut

Working nights, I don’t often have a need for my CrockPot during the week since I am home in the afternoon to cook dinner for my family before I head off to work.

However, weekends can be quite busy with weekly errands and extracurricular activities with my family, so I do still find that I use it quite often on the weekends to make our dinner just one less thing I have to worry about.

Weekends are for enjoying ourselves and this Crock Pot Braised Pork and Sauerkraut lets us do just that.

Feeling the effects of the cooler weather this week, I decided to make a crockpot version of the fresh ham and sauerkraut dish I had years ago while dining at a friend’s house. She made a braised, fresh ham simmered in sauerkraut and apple cider.

This Crock Pot Braised Pork and Sauerkraut mimics the flavors of that oven braised dish and is just as delicious.  My version uses a less expensive cut of meat which really stands up to the longer braising time of the crockpot and becomes so tender and juicy.

The ribs were fall off the bone tender and juicy. The sauerkraut soaks up the braising liquid and tastes amazing. This simple dish makes a very satisfying meal.

If you choose, you can use beer to simmer your pork and kraut, but make sure it’s a brand you really like. The alcohol boils off during the simmering process leaving behind an amplified flavor of the beer you choose.

Since we are not normally beer drinkers in my house and since we have a little one in the house who drinks apple juice, I used that instead and we find the flavors to be perfect for this Fall Crock Pot menu selection.

Ingredients
  

  • 1 bag sauerkraut , rinsed & drained
  • 2 to 3 pounds country style pork ribs
  • 1 cup of your favorite beer , apple cider, apple juice or water
  • Salt & pepper , to taste
  • garlic powder , to taste

Instructions
 

  • Directions:
  • Layer the country ribs on the bottom of the crock pot, fat cap down, if any.
  • Top the ribs with sauerkraut.
  • Add liquid.
  • Add salt, pepper and garlic powder to taste on the ribs.
  • Cover and cook on low from 6 to 8 hours.
