Crock Pot Overnight Pumpkin Pie Oatmeal
- 1 cup Steel Cut Oats
- 3 1/2 cups water, milk, or almond milk
- 2 cups (or about 1 can) pumpkin puree
- 1 teaspoon pure Vanilla extract
- 1/4 teaspoon salt
- 2 teaspoons pumpkin pie spice, more or less to taste
- 1/2 cup honey, agave or maple syrup
- Combine all ingredients into the slow cooker and cook on low for 8 hours.
- Garnish with more sweetener, chopped toasted walnuts and warm milk, optional.
