Maple Walnut Fudge

I know! I know! Yes, it is possible to make and enjoy fudge all year long. I do not understand quite how or why fudge became a candy predominately made and enjoyed at the Holidays.  

We do occasionally partake in a piece of fudge on vacation if we happen by a “Sweets Shoppe” which is another thing I don’t understand… How do fudge and vacations go together? You see it in every tourist destination imaginable.

This fudge was not one my Mom made each year even though maple walnut was her all-time favorite flavor ice cream and candy. I guess we never thought about making it ourselves with white chocolate chips! If my Mom were here, I know this would be her favorite fudge and she would ask for it every year much like my Snickerdoodles. Every year, I would make a special batch of Snickerdoodles just for her and I would wrap them in special cellophane bags tied with ribbons and put them in her stocking. It always made her smile to have her very own stash of cookies which, in turn, always made me feel so special that she thought so highly of them.

Staring in 2012, in honor of my Mom, this Maple Walnut Fudge recipe became my new Holiday tradition. Carefully wrapped in cellophane treat bags [paid link] and hand-delivered or shipped to family and friends afar, this is one tradition that makes my heart happy.

Ingredients
  

  • 3 cups white chocolate chips , (18 oz)
  • 14 ounce  Sweetened Condensed Milk , (14 oz.) can
  • Dash salt
  • 1 cup chopped walnuts
  • 1 1/2 teaspoons pure maple extract

Instructions
 

  • Line an 8-inch Square Baking Pan [paid link] with foil, wax paper or parchment paper [paid link] extending foil over edges of the pan.
  • Melt white chocolate chips with sweetened condensed milk and salt in heavy saucepan [paid link] over medium-low heat to avoid scorching the milk and overheating the chocolate. Remove from heat. Stir in walnuts and maple extract. Spread evenly into prepared pan.
  • Chill for 2 hours or until firm. Remove from pan by lifting edges of foil. Cut into 1-inch squares.
