I know spring has only just begun but summer comes before we know it in South Carolina. The summer heat here is often oppressive so we’ve already started thinking about the refreshing treats we’ll need for those long, hot summer days.
Peaches and Cream Popsicles are creamy and refreshing. They are exactly what we need for those long, hot summer days and ridiculously humid nights.
Fresh, sweet South Carolina peaches are a local delicacy in summer. The peaches we get at the farmers market are white fleshed and juicy.
The juices run down your face and your arms it’s crazy! My husband has developed the “lean” so the juices fall to the ground and not down his shirt. Peaches are the best local summer fruit.
I have a Popsicle Mold I invested in a few years ago but you can use small paper cups if that works better for your needs. If you don’t have the wooden Popsicle sticks, simply serve it like a frozen parfait. These cute little wooden spoons bring back some nostalgia for me and ice cream cups.

Peaches and Cream Popsicles
- 4 cups peaches , washed, peeled, pitted and sliced3 tbsp water3 tbsp sugar or honey1/2 cup whipping cream1/2 tsp pure vanilla extract
- In a small saucepan over medium heat, add the peaches, water and sugar. Simmer for about 5 minutes or until the peaches soften and remove from the heat.Allow the peaches to cool completely and then puree.Once the mixture is cool, whip the cream and vanilla together for about two minutes to make a soft whipped cream.Fold in the strawberries and then pour into the molds. Freeze for 4 hours or until set.
