I always seem to find myself struggling to figure out exactly what to make for a special occasion brunch like Mother’s Day, Easter, Grandparent’s Day or Christmas. I have so many recipes in my repertoire but still, I struggle. I like to make a variety to choose from and I do most often prepare each dish from scratch by myself which can be difficult — and timely. So I’ve rounded up some quick and simple recipes to make brunch just a little easier. Most are still from scratch but are quick and easy to prepare for a group, others employ a few short-cut strategies to help get me out of the kitchen in a timely fashion and back into enjoying the day with my family.
