Spring has only just sprung but Summer will come quickly in South Carolina. The Summer heat is often oppressive so it’s time to start thinking about refreshing treats for those long, hot summer days. Enter Strawberry Cream Popsicles! These are delicious, creamy and refreshing.

They are also one of our family favorites and they are really incredibly easy to make. If you prefer, you could make these from yogurt instead but my daughter prefers the cream. I can’t say she’s wrong, it is delicious.

I have a Popsicle Mold I invested in a few years ago but you can use small paper cups if that works better for your needs. If you don’t have the wooden Popsicle sticks, simply serve it like a frozen parfait. These cute little wooden spoons bring back some nostalgia for me and ice cream cups.

Strawberries and Cream Popsicles

Ingredients
  

  • 4 cups strawberries , washed, hulled and sliced
  • 3 tbsp water
  • 3 tbsp sugar or honey optional depending on sweetness of fruit
  • 1/2 cup whipping cream
  • 1/2 tsp pure vanilla extract

Instructions
 

  • In a small saucepan [paid link] over medium heat, add the strawberries, water and sugar. Simmer for about 5 minutes or until the berries soften and remove from the heat.
  • Allow the strawberries to cool completely and then puree.
  • Once the mixture is cool, whip the cream and vanilla together for about two minutes to make a soft whipped cream.
  • Fold in the strawberries and then pour into the molds.  Freeze for 4 hours or until set.

Notes

If you prefer, you can substitute yogurt for the whipping cream.

  1. If using frozen strawberries with syrup do you drain first or add syrup and all or can I add strawberry syrup from a can or jar

  3. I just made these and they are soo good! I used 3 cups of strawberries and one cup of sliced bananas (which I pureed with the strawberries), they came out perfect! This is now my go to recipe for fruit ice cream bars!

  4. I was just eating strawberry Pocky and searching up how to make a popsicle with the strawberry cream on it and your recipe popped up! I love how you used no chemicals, and the nutrition was high! My sisters will love these as I love baking and making foods :)! I can’t make these now but in the summer I will! Can’t wait to do it, I am sure this will turn out SOOOOO good!

    • Fresh berry season started prematurely here in January due to the warm Spring-like weather we were having. It lasted for 2 weeks and has now resumed March through June. July will be the latest before the sun gets too hot and burns up the plants. We look forward to strawberry season all winter and they are one of my daughter’s favorite fruits.
