On a whim, my husband and I drove out to a new (to us) restaurant, Juanita Greenberg’s, for dinner. My first impression was that it’s was more bar than restaurant, but I’d heard good things about the food — especially the nachos. It’s locally owned and operated and not a chain, which is something we look for when dining out, so we decided to stay and try it out. The restaurant is decorated in a hodge-podge of different pictures, paintings, and mannequins. Elvis, to be sure, has not yet left this building. Elvis is everywhere from a bust on the server station to pictures on the wall. When I asked our server, Trevor, he was at a loss over the decor, too.

Fresh Food Fast, not Fast Food

Anyway, the menu at Juniata Greenberg’s is concise very unlike most Mexican restaurants which often seem to go on forever. I rather liked the concise menu, as it made it easier to decide and order. When the food arrived, I understood the reasoning behind the menu. This is real, fresh food prepared fast and after the first bite of my chicken rice bowl, I could certainly taste the difference. My dinner was delicious. My husband got the beef nachos which are the house specialty and get rave reviews from those who’ve tried them. Our server advised us that the “whole order” of nachos is enough to feed two people so my husband ordered the “half order” and still could not finish his entire dinner.

 

Traditional or Fruit Flavored Margaritas?

Another thing Juniata Greenberg’s had on the menu that caught my attention was a list of specialty margaritas. Yes, they had traditional lime, but they also had strawberry, raspberry, peach, and pomegranate. Keeping to their motto of fresh food, fast, these were made with fresh fruit. Well, I love (LOVE!) margaritas, so when we got home, I decided to experiment with the watermelon we had just picked up at the Farmer’s market. I’ll say that Watermelon Margaritas were a smashing success.

Margaritas: Frozen or on the Rocks?

Watermelon Margaritas may just be my new favorite flavor. The flavor is bright and refreshing and tastes like summer in a glass. I’ll be serving these at my next taco or Cinco de Mayo party for sure. I usually like mine over the rocks rather than frozen, but you can totally blend these with ice if that’s how you like your margaritas. To salt, the rim of your glass just rub a wedge of fresh lime around the rim of the glass and then dip the rim into the margarita salt to coat. Garnish with a watermelon wedge.

Ingredients
  

For The Simple Syrup

  • 1 cup sugar
  • 1 cup water
  • 3 large pieces of lime zest (from the juiced limes below)

For the Margaritas

  • 24 ounces seedless watermelon cubes (about 4 cups)
  • 1/2 cup fresh lime juice
  • 3 large pieces of lime zest (from the juiced limes)
  • 1.5 cups white or silver tequila

Garnishes

  • small watermelon wedges
  • margarita salt , optional

Instructions
 

  • In a small saucepan [paid link], bring sugar, water, and lime zest to a boil over high. Reduce to a simmer and cook until sugar dissolves, 3 minutes. Set aside to cool.
  • In a blender [paid link], puree watermelon cubes until smooth. Strain through a fine-mesh sieve, into a large pitcher filled halfway with ice. Stir in the simple syrup, fresh lime juice, and tequila.
  • Garnish with fresh lime wedges.

Notes

  1. If you prefer frozen margaritas, simply blend these with a pitcher of ice!
