In a large skillet or Dutch oven with a tight-fitting lid, cook the smoked sausage rounds until they start to brown and get crispy edges. Then add the onions and garlic and cook until the onions begin to soften about 3 minutes.
Add the cabbage shreds along with the diced potatoes and the fennel seeds, caraway seeds and red pepper flakes (optional), Season with salt and pepper, to taste. Add the chicken stock and vinegar.
Cover and cook for 20 minutes or until the potatoes are tender. Check and adjust seasonings.
