6piecesof bacon2 russet potatoes, scrubbed and diced into 1/2 inch cubes1 (10 oz) bag Birdseye Steamfresh Flavor Full Ranch Broccoli1 (16 oz) pkg FarmRich Smokehouse brand Drub Rub Smoked Chicken1 cup onions, diced1 cup bell peppers, diced1 teaspoon garlic minced2 cups water or chicken stock2 tablespoonsHouse Blend Seasoning Salt, or more to taste4 ounces (2 cups) shredded Colby Jack Cheesefresh parsley, for garnish
Instructions
Cook bacon, drain on paper towels and crumble; set aside. To the bacon fat, add potatoes, seasoning salt and pepper to taste, then add water and simmer about 15 minutes or until potatoes are softened. Once the potatoes have softened, add onions and bell peppers, cook for 3 to 5 minutes. Add broccoli and chicken to the skillet, top with cheese and crumbled bacon, cover and cook until cheese is melted. Garnish with parsley, if desired.

Sofrito is generally sold in the International foods area of the grocer's freezer or sometimes may be found with the frozen vegetables. Sofrito is a blend of red and green bell peppers with onions that have been diced and frozen. We find these to be economical for the size bag you get vs the price and makes quick dinners that much faster. Of course, if you cannot find sofrito or frozen chopped vegetables in your market, you can always use fresh. This is just a time saving step for this recipe.
