1cupGruyere cheese, freshly shredded
1cupMonterey Jack cheese, freshly shredded
Instructions

Place two slices of bread butter side down in the skillet.
Evenly divide the cheddar, Gruyere, and Monterey Jack over the bread.
Top with remaining slices of bread, butter side facing up.
Cook 3 to 4 minutes until golden brown.
Carefully flip and cook another 3 to 4 minutes until the second side is golden and the cheese is fully melted.
Remove from heat, rest 1 minute, slice, and serve.
Notes
For best melting, always shred cheese from a block. • Cook low and slow to avoid burning before the center melts. • For extra crispiness, spread a very thin layer of mayonnaise on the bread before buttering. • Add cooked bacon, thin apple slices, or tomato for variation.
