These air fryer french fries are crispy on the outside, fluffy on the inside, and made from scratch with simple ingredients. This method uses a two temperature cook to guarantee golden, evenly cooked fries every time.

large russet potatoes
1 to 2
tablespoons
oil

teaspoon
salt or to taste

Instructions
Wash and peel potatoes if desired. Cut into evenly sized sticks about one quarter inch thick for even cooking.
Place cut potatoes in a bowl of cold water and soak for at least 30 minutes. This removes excess starch and improves crisp texture.
Drain and dry completely using clean kitchen towels. Moisture will prevent crisping.
Toss potatoes with oil and salt until evenly coated.
Preheat air fryer to 380 degrees F.
Arrange fries in a single layer in the basket. Do not overcrowd. Cook in batches if necessary.
Cook for 15 to 20 minutes, shaking halfway through.
Increase temperature to 400 degrees F and cook an additional 3 to 5 minutes until golden brown and crispy.
Season immediately after cooking and serve hot.
Notes
For best results, do not skip the soaking step.
Dry potatoes thoroughly before adding oil.
Cook in a single layer for proper airflow.
Finish at higher heat for maximum crispness.
Serve immediately for best texture.
