Cookies Spread while baking:
Dough was not properly chilled
pans were greased too much
Dough was placed on warm pans
Dough was made with margarine
Dough not well-chilled
Not enough flour was used
If the dough is soft after chilling, add flour a tablespoon at a time until the dough is easy to work with
Dough is Dry:
Drizzle in some milk or cream until the dough reaches desired consistency
Cookies Stick to the Pan:
grease or add parchment or silicone liners
Cookies break when moving from the Baking Trays:
allow cookies to cool 1-2 minutes before transferring to wire racks
Dough not rolled evenly
Oven has uneven heat. Rotate pans midway through baking.
