hard-boiled eggs

Instructions
Prepare the eggs
Slice the hard-boiled eggs in half lengthwise and gently remove the yolks and set aside.
Make the filling
Mash the yolks in a bowl until smooth. Stir in mayonnaise, sriracha, sesame oil, vinegar, and salt until creamy.
Taste and adjust
Add more sriracha for extra spice, or more mayo for a milder version.
Fill the eggs
Spoon or pipe the spicy yolk mixture back into the egg whites.
Garnish and serve
Sprinkle with sesame seeds, green onions, or a drizzle of chili oil before serving.
