Ingredients

rice vinegar

Instructions
Thinly slice cucumbers and place in a mixing bowl
In a separate bowl, whisk rice vinegar, sugar, and salt until dissolved
Pour dressing over cucumbers and add sliced red onion
Toss to combine and let sit for 5 to 10 minutes
Add cilantro, peanuts, and chili if using
Serve immediately or chilled
