Homemade Pancake mix is very easy to make and uses staple ingredients already in your pantry. When you're ready to make pancakes, use this dry pancake mix as the base of the recipe below.
In a large bowl mix all the dry ingredients together.

To Prepare the Homemade Buttermilk Pancakes
Place pancake mix in a large bowl and set aside.
Heat a non-stick skillet over medium-high heat. Meanwhile, pre-heat the oven to 200 degrees F - for keeping pancakes warm until serving.
Whisk together the eggs, butter, and buttermilk in a small bowl. Pour the liquid ingredients on top of the pancake mix.
Using a whisk, mix the batter just enough to bring it together. Don’t try to work all the lumps out. Overmixing will result in dense, chewy pancakes.
Check to see that the griddle is hot by placing a few drops of water onto the griddle. The griddle is ready if the water dances across the surface.
Lightly spray the skillet with non-stick cooking spray or butter.
Ladle the pancake batter onto the griddle into 4 to 5-inch circles. Sprinkle on fruit or chocolate chips, if desired.
When bubbles begin to form around the edges of the pancake and the skillet-side of the pancake is golden, gently flip the pancake.
Continue to cook 2 to 3 minutes more or until the pancake is completely set.
Serve immediately or remove to a towel-lined baking sheet and cover with a towel. Hold in a warm place for 20 to 30 minutes.
