Chicken dumpling soup with flat dumplings is a delicious and comforting Southern dish that features tender chicken and flavorful dumplings in a savory broth.

Heat oil in a large pot over medium-high heat. Add the chopped vegetables and saute until softened.
Add flour over the top of the vegetables and stir to combine. This will thicken the sauce later as it comes to a boil.
Add the chicken stock, shredded chicken, and frozen flat noodles (I use half a box). Bring to a boil and then reduce to a simmer. Cook until the flat noodles are cooked through. Season to taste with salt and pepper. Garnish with fresh parlsey, if desired. Serve hot.
