Ingredients
  

  • 1 lb carrots , peeled and left whole
  • 1 tbsp olive oil , just enough to coat
  • 1 tbsp balsamic vinegar
  • 1 tsp salt more or less to taste
  • 1/2 tsp ground black pepper more or less to taste
  • 1 tbsp freshly chopped Parsley optional

Instructions
 

  • Preheat the oven to 350F.
  • Lightly oil the carrots and then season with salt, ground black pepper, and sprinkle with balsamic vinegar. Place on the rimmed baking sheet.
  • Place sheet pan in the oven. Roast 40-45 minutes or until the vegetables are tender.
  • Sprinkle with fresh parsley before serving.

    • Hi Tonya,
      I have never tried Malt vinegar on carrots, so I’m not sure how it would turn out – if it were me, I’d say it can’t hurt to try. Balsamic has a slightly sweet note to it that malt vinegar doesn’t. That being said, I don’t think that malt vinegar is that different from apple cider vinegar which was recommended as a good substitute for balsamic when I did a quick google search on the subject. I wish I could be of more help. If you decided to give it a try, let me know and we will add your note to the recipe!
