Why This Recipe Works

  • Thin patties cook quickly and stay tender
  • Steamed onions infuse the beef with classic Krystal flavor
  • Soft buns absorb juices without falling apart
  • Simple seasoning lets the beef shine
  • Easy assembly makes it perfect for feeding a crowd

Ingredients for copycat Krystal burgers including ground beef, diced onions, slider buns, cheese slices, pickles, mustard, salt, and pepper.

Ingredients and Why They Matter

  • Ground beef (80/20 recommended): Provides enough fat to keep the thin patties juicy and flavorful
  • Dinner rolls or slider buns: Soft texture mimics classic Krystal buns and steams beautifully
  • Onion (finely diced): Steams into the burgers, adding sweetness and signature flavor
  • American cheese slices: Melts smoothly for that classic slider finish
  • Salt and pepper: Simple seasoning enhances the beef without overpowering it
  • Water or beef broth: Creates steam in the pan to soften buns and cook onions evenly

How to Cook Copycat Krystal Burgers

  1. Preheat the oven to 375°F.
  2. Prepare the onion base:
Evenly spread the finely diced onion across an 11 × 17-inch rimmed baking sheet [paid link]. Set aside.
  3. Mix the meat:
In a large bowl, combine the ground beef, water, salt, and pepper. Mix thoroughly until fully incorporated.
  4. Form the patties:
Drop the meat mixture in even dollops over the onions. Carefully press and spread the meat until it covers the entire baking sheet in a thin, even layer—about ¼-inch thick. Optional method:
Place the meat between two sheets of wax paper or plastic wrap and roll it out to an 11 × 17-inch rectangle using a rolling pin. Transfer the flattened meat onto the onion layer.
  5. Score the meat:
Using a sharp knife, pizza cutter, or pastry wheel, score the meat into 16 sections. Precision isn’t necessary.
    • Score lengthwise down the center of the tray
    • Score widthwise across the center
    • Cut each section in half widthwise
    • Repeat until you have 16 sections
The sections will not be perfectly square, and that’s fine. Note: The meat will shrink slightly as it cooks due to fat and moisture release. This is normal and helps the patties fit the buns perfectly.
  6. Bake:
Bake at 375°F for 12–15 minutes, until the meat is fully cooked and juices have released into the pan.
  7. Assemble the burgers:
Before serving, steam the buns in the microwave for about 10 seconds. To assemble, place one patty on each bun, spoon some cooked onions over the meat, add mustard, and top with two dill pickle slices. Alternate method:
Place the bottom half of each bun directly onto the cooked meat and return the pan to the oven for 1 minute to steam. Carefully flip each bun onto a plate, add mustard and pickles, then top with the remaining bun half.

Equipment

Ingredients

  • 1 cup onion , finely diced
  • 2 lbs ground beef , 80/20
  • 2 tsp. kosher salt more or less to taste
  • 1/2 tsp. black pepper more or less to taste
  • 1/4 cup Water
  • 1/4 cup Mustard about 1 tsp each slider
  • 32 Dill pickle slices 2 per slider
  • 16 yeast dinner rolls , sliced in half horizontally

Optional Toppings (not calculated in the nutritioanl information below)

  • 16 slices American Cheese 1 per slider
  • 16 strips Bacon cut in half

Instructions

  • Pre-heat oven to 375 °F.
  • Spread the finely diced onion onto a 11 x 17-inch baking sheet and set aside.
  • Add ground beef, water, salt, and pepper to a large bowl and mix thoroughly to combine.
  • Drop the meat mixture in even dollops on top of the onions. Carefully press the meat so that it covers the entire baking sheet. Try to spread it as thinly as possible – about 1/4 inch thickness.
Alternatively, you could put the meat between two pieces or wax paper or plastic wrap and use a rolling pin to roll it out into an 11 x 17-inch rectangle and then add the meat on top of the onion layer.
  • Score the meat mixture with either a sharp knife, pastry wheel, or pizza cutter. It doesn't have to be exact. You should end up with 16 sections.
Do this by scoring the meat lengthwise down the center of the tray. Next score the meat widthwise across the middle. Then repeat the widthwise scores again scoring each section of meat in half again. Repeat this again and score each of the four sections widthwise again to end up with 16 sections. The sections will not be completely square.
After cooking, there will be some shrinking of the meat as it releases fat and water and this is completely normal. The resulting patty will be a little smaller and fit on the slider bun perfectly
  • Bake at 375 °F for approximately 12-15 minutes. There will be juices released as the meat and onions cook.
Before plating, steam the buns in the microwave for about 10 seconds. To serve, add one burger patty, some onions, mustard, and two dill pickle slices to each burger.
Alternatively, you may place the bottom half of each bun onto the burger meat and return to the oven for a minute to steam the bun. As you are serving, carefully flip each bottom bun and a burger with onions over onto the dinner plate and add the mustard and pickles and top with the other half of the bun.
Both techniques result in a great-tasting Krystal burger.
  • Serve immediately.

  1. I made these tonight, super yummy! I sprinkle water on the buns cover with foil to steam in oven. It actually taste better than Krystal’s. Big hit in my home!

  2. I made these tonight using dehydrated onions. These tasted just like Krystal’s except one thing, the bun. The only slider buns I could find were brioche. These are too much bread. I wish I could find better buns but all in all they tasted just like the original. My husband suggested Hawaiian buns but the sweetness would ruin it. Hats off to the creator of these.❤️

  3. Hubby said they were pretty close to Krystal’s! I added cheese and also used the dehydrated onions. We left the pickles off but added mayo and mustard. That’s how we order them at Krystal’s. They turned out good! Will definitely make again!

  4. Trying these tonight! Thanks for all the great info and recipe. I am only doing 8 sliders, so should I move down to a 9”x13” baking sheet?

    • I personally love Claussen or Vlasic. I am not a fan of Mt. Olive brand as I feel they lack crunch. That being said, most take away style fast food doesn’t really have the crunchiest of pickles. So, I would opt for whatever brand you prefer. That will always taste the best.

  5. Very good! I used dehydrated onion. That’s the Krystal way. If you cut the buns in half, I put the bottom upside down on the cooked burgers and place the top on the upside down bottom. Wrap in foil and return to the oven for 5 minutes. Voila! Steamed buns with the juices. The Krystal way! Great recipe. Tastes remarkably close to the southern classic.

  6. This hit the spot and tastes even better. So glad I found your recipe. It was delicious. Even better, it was easy to make. I moved from the south to out west where Krystal’s were everywhere. Now, the nearest Krystal’s is 10 hours away and the nearest White Castle (last resort) is even further.

  7. Is the pan size a half-sheet? Being born in Savannah eons ago, I think that Krystal’s is part of my DNA even though I’ve lived all over the world. I can’t wait to try these! Thanks.

  8. Is it possible to cook these without the onions, I know it’s an important part of the burger, but I’m the one that held the drive thru line up by asking for no onions on my Krystal burgers. Thank you

    • Hi Don,
Absolutely. However, it will have a slightly different flavor. Also, the onions give the meat some moisture to steam the meat, so you may find you need to add a little bit of water to help with the steaming.

    • ONLY salt and Pepper is added to the beef, and is added at the FACTORY. The exact ratios are not known to any regular Krystal’s employees but can be figured out and replicated. The DEHYDRATED onions are reconstituted with Hot Water, and left to sit for a minimum of 30 minutes.
Secondly, the meat Patties and the onions are NOT baked in an oven, but are steamed on a grill. Water is ALWAYS added, before the meat patties are placed on the grill, in order to steam the meat!
If I remember correctly, the patties are placed IN THE WATER, and are topped with the rehydrated onions, then flipped after about 2 minutes of steaming. Then the burger buns are added, the bottom bun first, then the top bun, then steamed for a couple of minutes.

      • Hello Wes,
You’re not wrong. There are some modifications to the actual technique to fit the home kitchen. Don’t suppose you have a “custom steamer grill” installed in your kitchen at home, do you? If not, then you need an alternate method to cook a Krystal burger at home.

  9. We’ve made these several times and they always turn out great. In Virginia, our closest Krystal is in Georgia so we only have the real thing when we visit family in Florida. This recipe definitely satisfies the craving between visits.

  10. This looks delicious! I definitely want to try this recipe, but I’m not a huge fan of onions. Would I have to make any changes to how I follow the recipe if I omit the onions?

    • Hi! I am from Florida, too, now living in South Carolina. We do the same on drives back to see my family. These are a fun treat at home in the in-between times. I hope you enjoy them. The steamed onions (and soft rolls) make the difference for me.

  13. Hello! Just a quick question. There’s water listed under the ingredients, but I don’t see it in the directions. Do I mix it into the ground beef mixture? Thank you for posting the recipe! My husband is a huge Krystal’s fan and there isn’t anything like it here in WA. He’s very excited for me to make them! :)
